10 Ways with Jacket Potatoes
Sweet Chili prawns
Grate 1 tsp. fresh ginger into small wok or frying pan with 100grams raw peeled prawns, 3 tbsp. sweet chili sauce and 1 shredded spring onion, Stir fry for 5 min until the prawn s are cooked through, then serve sprinkled with sesame seed.
Spicy Beans
Heat small tin baked beans in a pan with ½ tsp ground cumin, ¼ tsp hot chili powder and a large chopped tomato until, bubbling. Top with a spoonful natural yogurt and roughly chopped coriander.
Oriental Sticky Chicken
Heat 1 tsp olive oil in a wok and stir fry 140g chicken strips with ½ tsp Chinese five spices powder until the chicken is five browned. Add 50g diced red pepper, a small handful each of bean sprouts and cashew nut , then continue frying until the chicken is cooked through. Stir in 1 tbsp. soy sauce and 2 tsp clear honey and season.
Light Tuna Mayo
Finely chopped 1 spring onion and stir into 2 tbsp. low fat mayonnaise. Add a small tin drained tuna and a good spoonful tinned sweet corn, season and mix well.
Greek Salad Toping
Roughly chop 2 tomatoes and finely slice ½ small red onions. Combined with 6 halved olives, 50g crumbled feta and a good pinch dried mint. Finally drizzle with balsamic vinegar and pile onto your potato.
Steak & Mushroom
Slice a 100g rump steak and a small handful mushrooms thinly then fry briefly in a non-stick pan until brown. Add heaped tbsp onion chutney and 75 ml beef stock then bubble gently until a sauce forms.
Creamy Guacamole
Halve 1 small avocado and mash one half with the juice 1 lime and a splash Tabasco. Dice the remaining avocado, 1 tomato and ½ small red onion stir into the mashed avocado with a handful coriander leaves.
Bubble & Steak
Stir fry a handful shredded cabbages with a small handful frozen peas and 2 chopped spring onions for 4-5 min until tender. Slice a baked potato in a half and scoop out the insides leaving the skins whole mash stir in the greens and season. Spoon the mixture back inside the skins and baked for a further 5 min to crisp up.
Spicy salsa spuds
Mix a handful diced cooked chicken with 4 tbsp fresh tomato salsa and season. Halve a cooked jacket potato and lay in a baking tray, cut side up spoon over the chicken and salsa mix sprinkle with grated cheddar then grill until the cheese is melted and the chicken is hot. Serve with a green salad.
Instant fish pie
Scoop out the insides of a jacket potato and mash with flaked hot smoked haddock 3 tbsp. milk and 1 sliced spring onion. Season pile back into the skins and bake for a further 10 min.
